Over at Red Ted Art, my son (Red Ted (2)) and I (Maggy (old)) do lots of arts and crafts. Sometimes Pip Squeak (0) joins us. Today, however we are getting crafty in the kitchen. Red Ted loves to help in the kitchen and we have found this perfect muffin recipe which is great for little helpers. It takes less than 10min to prep and taste scrummy!
You start with a small pot of yoghurt (125ml) and use that as your measuring device.
- 1 small pot of yoghurt (we usually use strawberry or raspberry flavoured)
- 3/4 pot sunflower oil
- 1 egg
- 1 pot sugar
- 3 pots self raising flour (or normal flour with a teaspoon of baking powder)
- 1 pot frozen fruit (you can use fresh fruit or choc chips too, but I always have some frozen blueberries or raspberries on hand, so that we can make these whenever we “need” to)
Reheat the oven at 180C. Mix the ingredients in the above order. Stirring after every pot.added.
Fill into 12 small – medium sized muffin tins.
Bake for approx 25min – though I check that they are golden.
Remove, let cool on rack.
